class=\"wp-block-stackable-text stk-block-text stk-block stk-890652f\" data-block-id=\"890652f\"><p class=\"stk-block-text__text\">Nous pouvons constater une \u00e9norme prise de viscosit\u00e9 apr\u00e8s 85\u00b0C, ce qui peut \u00eatre probl\u00e9matique lors du proc\u00e9d\u00e9 de cuisson industriel avec notamment des fortes sollicitations m\u00e9caniques des \u00e9quipements et une class=\"wp-block-stackable-text stk-block-text stk-block stk-05b393c\" data-block-id=\"05b393c\"><p class=\"stk-block-text__text\">Avec la r\u00e9alisation de courbes d\u2019\u00e9coulement classique (aller de 1 \u00e0 50 s-1), nous pouvons mesurer l\u2019\u00e9volution du kr\u00e9mage (texturation) en fonction du temps \u00e0 trois instants&nbsp;: juste apr\u00e8s la cuisson, 10 et 20 minutes de texturation.
